Ingredients

 Turkey carcass, broken up 1
 Water14 Cup (16 tbs)
 Bay leaves2
 Salt1 Tablespoon
 Pepper3/4 Teaspoon
 Sugar1 Teaspoon
 Medium carrots, sliced 3
 Large onion, chopped 1
 Celery ribs6 , sliced
 Instant chicken bouillon powder 1 tbsp.
 Parsley flakes1 Tablespoon
 Thyme1/2 Teaspoon
 Long grain rice1/2 Cup (16 tbs)
 Chopped turkey 2 cups

Directions

Put turkey carcass, water, bay leaves, salt, pepper and sugar into large pot.
Bring to a boil.
Cover and simmer for 2 hours.
Remove carcass.
Discard bay leaves.
Return any bits of meat to pot.
Discard bones.
Add remaining ingredients.
Bring to a boil.
Cover and simmer for at least 30 minutes until all vegetables are cooked.
Taste for seasoning.
Add more water if too thick.
