Ingredients
| Turkey carcass, broken up 1 | ||
| Water | 14 Cup (16 tbs) | |
| Bay leaves | 2 | |
| Salt | 1 Tablespoon | |
| Pepper | 3/4 Teaspoon | |
| Sugar | 1 Teaspoon | |
| Medium carrots, sliced 3 | ||
| Large onion, chopped 1 | ||
| Celery ribs | 6 , sliced | |
| Instant chicken bouillon powder 1 tbsp. | ||
| Parsley flakes | 1 Tablespoon | |
| Thyme | 1/2 Teaspoon | |
| Long grain rice | 1/2 Cup (16 tbs) | |
| Chopped turkey 2 cups | ||
Directions
Put turkey carcass, water, bay leaves, salt, pepper and sugar into large pot.
Bring to a boil.
Cover and simmer for 2 hours.
Remove carcass.
Discard bay leaves.
Return any bits of meat to pot.
Discard bones.
Add remaining ingredients.
Bring to a boil.
Cover and simmer for at least 30 minutes until all vegetables are cooked.
Taste for seasoning.
Add more water if too thick.
Bring to a boil.
Cover and simmer for 2 hours.
