 Skim milk1 Cup (16 tbs)
 Enriched white bread - 2 slices , made into fine crumbs
 Ground turkey12 Ounce
 Swiss Cheese4 Ounce, shredded
 Egg whites2
 Salt1 Teaspoon
 Pepper1/8 Teaspoon
 Ground mace1/8 Teaspoon
 Ground red pepper1/8 Teaspoon
 Plain unflavored yogurt - 1/2 cup
 Parsley1/4 Cup (16 tbs), chopped
 Tarragon1 Tablespoon, chopped
 Tarragon leaves1 Teaspoon, dried
 Tomato-Herb Veloute

Directions

GETTING READY
1 In a small nonstick saucepan, add milk and bread crumbs.
2 Stirring constantly, cook on high heat for about 3 minutes, until very thick.
3 Transfer to a plate , cover and place in a refrigerator for 30 minutes.
4 Preheat the oven to 350 degrees fahrenheit.

MAKING
5 In a work bowl of a food processor, add turkey, cheese, egg whites, salt, pepper, mace, and red pepper; process until smooth.
6 Add in yogurt, parsley, tarragon, and chilled bread crumb mixture; process until combined.
7 Prepare four 1 1/4-cup baking dishes by spraying with nonstick cooking spray.
8 Spoon 1/4 of mixture into each prepared dish and, using a spatula that has been dipped in cold water, smooth the tops.
9 Using a foil, cover the dishes and place in a baking pan.
10 Pour water into the pan to about halfway up the sides of dishes.
11 Bake for 30 to 40 minutes, until firm.
12 Allow to stand for a few seconds and unmold.

SERVING
13 Serve immediately.
