Turkey Taco Salad Recipe

Ingredients
2/3 cup mild red salsa
1/2 cup sour cream
1 tablespoon cumin
3/4 teaspoon salt
1/2 teaspoon pepper
1 can (20 ounces) kidney beans
1 can (16 ounces) corn kernels
2 cups cubed [1/2 inch) cooked turkey
3 stalks celery
8 leaves lettuce
2 cups unsalted tortilla chips
Directions
1 Make the dressing: In a small serving bowl, stir together the salsa, sour cream, cumin, salt and pepper.
2 Drain the kidney beans in a strainer or colander and rinse them under cold running water. Add the corn to the beans and set them aside to drain well.
3 Cube the turkey. Cut the celery into 1/2-inch dice.
4 In a large bowl, combine the beans, corn, turkey and celery, and toss to combine.
5 Shred the lettuce and divide it among 4 salad plates. Spoon the turkey mixture on top of the lettuce. Garnish each serving with tortilla chips, whole or crumbled, and serve with the dressing on the side.
