Directions
1)In a large bowl shred the cooked turkey breasts and set aside.
2)Obtain the stuffing from the turkey or a prepare a box of stuffing as per package directions and set aside.
MAKING:
3)On a clean and dry board or surface place a spring roll wrapper with one corner facing you.
4)Place 2 ounces of stuffing about an inch up from the corner closest to you and press down to make a small bed.
5)Spoon 2 tablespoons of cranberry jelly into the middle of the stuffing.
6)Top with 1 ½ ounces of the shredded or pulled turkey.
7)Starting with the corner that is the closest to you, roll the spring roll up about ½ way. Tuck the right and left corners into the center and continue rolling until only the top corner is showing.
8)Brush the top corner with the egg and roll tightly to seal the spring roll.
9)Place a second wrapper down, same way as before, and place the already rolled spring roll an inch from the bottom corner. Roll the spring roll the same way, tucking in the corners and brushing egg on top to seal.
10)Repeat with the remaining spring rolls until you have 6 rolls.
11)Deep fry the rolls at 375 degrees until golden brown.
SERVING:
12)Serve with warm turkey gravy for dipping and enjoy!
