Prunes Turkey Stuffing Recipe

Ingredients

 
2 rashers bacon, chopped
 
1/4 tsp. each of nutmeg, thyme, and marjoram
 
4 oz. melted fat
 
Liver, heart, and gizzard
 
2 tsp. salt
 
1/4 small clove garlic,chopped
 
Pinch of pepper
 
2 or 3 Tbs. wine vinegar
 
1 lb. hot mashed potatoes or canned chestnut puree
 
8 oz. prunes, soaked and chopped
 
2 c. breadcrumbs
 
2 Tbs. chopped parsley
 
Stock from the giblets for mixing

Directions

Chop the bacon and fry it for a few minutes in a little of the fat, with the chopped liver and garlic.
The other giblets should be cooked.
Chop them finely.
Mix all the ingredients together with the rest of the dripping and enough stock to moisten.
This stuffing is good either hot or cold, and should be a rich plum colour.
