Ingredients

 
2 6 inch flour tortillas
 
1 teaspoon vegetable oil
 
1 turkey breast cutlet , about 1/4 inch thick
 
1 teaspoon lime juice
 
1/4 teaspoon hot red pepper sauce
 
2 thin slices peeled avocado
 
1/2 cup shredded iceberg lettuce
 
1 small ripe tomato, cored and chopped
 
2 thin slices yellow onion, separated into rings
 
2 tablespoons plain low fat yogurt

Directions

Preheat the oven to 250°F.
Wrap the tortillas in aluminum foil and warm them about 5 minutes in the oven.
Meanwhile, in a heavy 10 inch skillet, heat the vegetable oil over high heat for 1 minute.
Add the turkey cutlet and cook for 2 to 3 minutes on each side or until lightly browned.
Transfer the turkey to a cutting board and slice across the grain into thin strips.
In a medium size bowl, toss the turkey strips with the lime juice and red pepper sauce.
Place equal amounts of the turkey, avocado, if desired, lettuce, tomato, and onion rings in the center of each warm tortilla.
Top with the yogurt and fold the tortilla over the filling; serve immediately.
