Turkey Sausage Recipe

Ingredients
1 tablespoon plus 2 teaspoons vegetable oil
1 small yellow onion, finely chopped (1/2 cup)
1 clove garlic, minced
3 tablespoons water
12 ounces ground turkey
1/3 cup fresh bread crumbs
3 tablespoons skim milk
1/2 teaspoon ground sage
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon all-purpose flour
Directions
1 In a 12-inch non stick skillet, heat 2 teaspoons of the oil over moderate heat. Add the onion and garlic and saute, stirring often, for 5 minutes or until softened. Add the water and cook for 4 rninates or until it has evaporated and the onion is soft.
2 In a medium-size bowl, combine the turkey, bread crumbs, milk, sage, salt, and pepper. Add the onion mixture and mix well. Shape the mixture into 8 oblong patties, each about 1/2 inch thick.
3 Dredge the patties in the flour, shaking off any excess. Heat the remaining tablespoon of oil in the skillet over moderate heat. Add the patties and cook for 4 minutes or until golden brown. Turn the patties over and cook 4 minutes more or until golden brown and cooked through.
