Ingredients

 
6 flour tortillas, 7 inches in diameter
 
2 teaspoons olive oil
 
1 medium-size yellow onion, finely chopped (1 cup)
 
1 medium-size sweet red pepper, cored, seeded, and diced (3/4 cup)
 
1 1/4 pounds ground turkey
 
1/4 teaspoon salt
 
2 cloves garlic, minced
 
1 teaspoon each ground cumin, chili powder, and dried oregano, crumbled
 
1 jalapeno pepper, seeded and finely chopped(1 tablespoon) (optional)
 
1/2 cup low-sodium tomato sauce
 
2 tablespoons minced fresh cilantro (coriander) or 2 tablespoons minced parsley mixed with 3/4 teaspoon dried cilantro
 
1/2 cup grated Monterey
 
Jack cheese (2 ounces)
 
1 cup Tomato Salsa (optional)

Directions

1 Preheat the oven to 350°F. Wrap the tortillas in aluminum foil and heat them in the oven for 8 minutes. Meanwhile, in a 12-inch nonstick skillet, heat the oil over moderate heat. Add the onion and red pepper and saute, stirring occasionally, for 5 minutes or until the onion is soft.
2 Add the turkey and salt to the skillet and saute, stirring, for 3 minutes or until the turkey is no longer pink. Add the garlic, cumin, chili powder, oregano, and, if desired, the jalapeho pepper; saute, stirring, for 1 minute or until the mixture is dry. Stir in the tomato sauce and cilantro.
3 Increase the oven temperature to 450°F. Unwrap the tortillas and place them on greased baking sheets. Spread an equal amount of the turkey mixture on each one and sprinkle with the cheese. Bake for 8 to 10 minutes or until the cheese is melted and the tortillas are golden.
