Turkey Potato Casserole Recipe
Turkey Potato Casserole was my family cook's signature dish, now that he's gone I have taken up the task of preparing it for the family. Ingredients
3 tablespoons butter or margarine
3/4 cup sliced mushrooms
1/2 cup finely chopped onion
2 cups diced cooked turkey
2 cups diced cooked potatoes
1 tablespoon snipped parsley
1 1/2 teaspoons seasoned salt
1/8 teaspoon pepper
2/3 cup (1 small can) undiluted evaporated milk
Directions
1. Put butter, mushrooms and onion into a 2-quart glass casserole. Cook uncovered in microwave oven about 4 minutes at HIGH, or until mushrooms are tender; stir after 1 minute.
2. Put turkey, potatoes, parsley, seasoned salt and pepper into casserole. Add evaporated milk gradually, stirring gently. Heat mixture uncovered in microwave oven to serving temperature (about 5 minutes at HIGH); stir once during heating.
