Turkey Parmigiano Recipe
Ingredients
| 4 oz. uncooked whole wheat spaghetti | ||
| Whole tomatoes | 1 Can (10oz) | |
| Tomato Paste | 1 Can (10oz) | |
| Snipped parsley | 1 Tablespoon | |
| Dried basil leaves | 1 Teaspoon | |
| Mushrooms | 2 Cup (16 tbs), sliced | |
| 8 oz. turkey cutlets | ||
| Parmesan cheese | 2 Teaspoon, grated | |
Directions
Prepare spaghetti as directed on package.
Drain.
Set aside and keep warm.
In 9-inch square baking dish, combine tomatoes, tomato paste, parsley and basil.
Cover with plastic wrap.
Microwave at High for 5 minutes.
Stir in mushrooms.
Place turkey on tomato mixture.
Cover with wax paper.
Reduce power to 70% (Medium High).
Microwave for 9 to 14 minutes longer, or until turkey is no longer pink, rotating dish once or twice.
Serve over cooked spaghetti.
Sprinkle with Parmesan cheese.
