Turkey Osso Buco Recipe

Ingredients
4 tsp (20 ml) vegetable oil
2 lbs (900 g) turkey leg cut "osso boco"
Salt and pepper
Pinch of thyme
1 onion, chopped
2 garlic cloves, finely sliced
1/4 Cup (60 ml) flour
3/4 Cup (180 ml) tomato juice
6 tbsp (90 ml) orange juice
1 tsp (5 ml) lemon juice
2 Cups (500 ml) chicken stock
1 bay leaf
2 pinches of cayenne pepper
Directions
– Preheat oven to 350 °F (175 °C).
– In a skillet, heat oil and cook meat until golden, season with salt and pepper, and sprinkle with thyme.
– Add onion and cook until golden.
– Add garlic, and cook for 1 minute.
– Sprinkle mixture with flour, stir and cook for 3 to 4 minutes.
– Add liquids and bay leaf to mixture, sprinkle with cayenne pepper and cook over low heat for 10 minutes.
– Return to oven and cook 60 minutes longer.
