Turkey Navarrese Recipe
Ingredients
| Turkey | 1 6 pound | |
| Salt pork | 1/4 Cup (16 tbs), diced | |
| Olive oil | 1/4 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Tomato sauce | 2 Cup (16 tbs) | |
| Dry white wine | 2 Cup (16 tbs) | |
| White onions | 8 , peeled | |
| Chestnuts | 8 , peeled | |
| 2 carrots, cut in pieces | ||
| 1/4 cup diced, spicy Italian sausage | ||
Directions
Have butcher cut turkey in pieces and remove bone from breast.
Cut breast in two pieces.
Fry salt pork on medium heat until crisp.
Remove from skillet and reserve.
Brown turkey pieces and transfer to a buttered 2 1/2 -quart casserole as browned.
Mix remaining ingredients and add to turkey in casserole.
Cover and bake at 350° F.for 1 1/2 hours or until tender.
Sprinkle with salt pork.
