Ingredients

 Turkey1 6 pound
 Salt pork1/4 Cup (16 tbs), diced
 Olive oil1/4 Cup (16 tbs)
 Salt1 Teaspoon
 Tomato sauce2 Cup (16 tbs)
 Dry white wine2 Cup (16 tbs)
 White onions8 , peeled
 Chestnuts8 , peeled
 2 carrots, cut in pieces
 1/4 cup diced, spicy Italian sausage

Directions

Have butcher cut turkey in pieces and remove bone from breast.
Cut breast in two pieces.
Fry salt pork on medium heat until crisp.
Remove from skillet and reserve.
Brown turkey pieces and transfer to a buttered 2 1/2 -quart casserole as browned.
Mix remaining ingredients and add to turkey in casserole.
Cover and bake at 350° F.for 1 1/2 hours or until tender.
Sprinkle with salt pork.
