Turkey Meatloaf Recipe

2. Preheat the oven to 400°F.Spray an 8 1/2 x 4 1/2-inch loaf pan with nonstick spray.
3. Peel the potato and shred it on the large holes of a box grater into a large bowl. Add the turkey, onion, parsley, egg white, mustard, oregano, Worcestershire, salt, and 1/4 cup of the ketchup. Gently mix to blend, but do not over mix. Scrape the mixture into the loaf pan and spread level.
Spread the top of the meatloaf with the remaining 1/4 cup ketchup.
4. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 165°F, about 50-55 minutes.Remove from the oven and let stand about 15 minutes. Cut into 6 slices.
