Turkey Macaroni And Fruit Salad Recipe
Ingredients
| Elbow macaroni | 2 Cup (16 tbs) | |
| 2 large navel oranges | ||
| Orange juice | 2 Tablespoon | |
| 2 kiwifruits, peeled and sliced | ||
| 6 ounces cooked turkey breast, cut into 1/2" cubes | ||
| Red apple | 1 Medium, chopped | |
| Strawberry yogurt | 1 Can (10oz) | |
| Ground ginger | 1/4 Teaspoon | |
Directions
Cook the macaroni according to the package directions, but without adding the salt.
Drain, then rinse with cold water and drain again.
Transfer to a large bowl.Meanwhile, peel the oranges.
Section them over a small bowl to catch the juices.
If necessary, add enough of the additional orange juice to make a total of 2 tablespoons.
Cut the kiwi slices in half.
Add the oranges, orange juice, kiwi, turkey and apples to the macaroni.
In a small bowl, stir together the yogurt and ginger.
Add to the macaroni mixture and gently toss until coated.
