Turkey Divan Recipe
Ingredients
| 4 stalks broccoli or 8 stalks asparagus (approximately 1 lb.) | ||
| Butter | 2 Tablespoon | |
| Whole wheat flour | 4 Tablespoon | |
| Turkey stock | 2 Cup (16 tbs) | |
| 1/2 cup heavy cream, whipped, or 1/2 cup sour cream or yogurt | ||
| Sherry | 3 Tablespoon | |
| Salt, pepper to taste | ||
| Cooked turkey slice | 8 | |
| Parmesan cheese | 6 Tablespoon, grated | |
Directions
Steam broccoli or asparagus until just tender.
Keep hot.
Melt butter in a saucepan, add flour and blend thoroughly.
Gradually add stock and cook, stirring, until sauce is thick and smooth (approximately 10 minutes).
Remove from heat.
Fold in whipped cream, sour cream or yogurt.
Add sherry.
Season to taste.
Heat broiler.
Place broccoli or asparagus on a heatproof platter or in a shallow casserole.
Pour half the sauce over it.
Arrange sliced turkey over the sauce-covered vegetable.
Add 4 tablespoons cheese to the remaining sauce and pour it over the turkey.
Sprinkle with additional 2 tablespoons cheese and place the platter or casserole under the broiler until heated through and lightly browned.
