Turkey Cutlets with Gingered Peach Sauce Recipe
Ingredients
| Peach | 1 Can (10oz), drained | |
| Golden Raisins | 1/4 Cup (16 tbs) | |
| 1 teaspoon instant chicken bouillon granules | ||
| Curry powder | 1/4 Teaspoon | |
| Ground ginger | 1/4 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Water | 1/2 Cup (16 tbs) | |
| Cornstarch | 1 Tablespoon | |
| 1 1/2 lbs. turkey cutlets, about 1/4 inch thick | ||
Directions
In food processor or blender container, puree peach slices.
In 4-cup measure, combine peach puree, raisins, bouillon, curry powder, ginger and salt.
In 1-cup measure, blend water and cornstarch.
Blend into peach mixture.
Microwave at High for 5 to 6 minutes, or until mixture is thickened and translucent, stirring twice.
Arrange cutlets in 10-inch square casserole.
Cover with wax paper.
Microwave at 70% (Medium High) for 11 to 17 minutes, or until turkey is firm and no longer pink, rearranging turkey once.
Remove cutlets to serving platter.
Spoon sauce over turkey.
Microwave at 50% (Medium) for 6 to 8 minutes, or until sauce is heated through.
Garnish with green onions.
