Turkey Cutlets With Citrus Beurre Blanc Recipe

Ingredients

 
1 large orange
 
2 green onions
 
1 tablespoon lemon juice
 
1 16-ounce package fresh or frozen turkey cutlets
 
1/2 cup butter or margarine at room temperature
 
1/2 teaspoon salt
 
1/4 teaspoon pepper
 
Orange and lemon slices for garnish

Directions

1. From orange, grate 1 teaspoon peel and squeeze 1/2 cup juice. Mince green onions.
2. In small saucepan over medium heat, cook orange juice and green onions until green onions are tender. Stir in lemon juice; refrigerate to cool slightly.
3. Meanwhile, on cutting board, with meat mallet or dull edge of French knife, pound each turkey cutlet to 1/8 inch thickness.
4. In small bowl, with mixer at medium-low speed, beat butter or margarine, salt, and pepper until smooth. Gradually beat in orange-juice mixture, 1 tablespoon at a time, making sure that all liquid is absorbed after each addition and scraping bowl frequently with rubber spatula. Stir in orange peel.
5. In 12-inch skillet over medium-high heat, heat half of butter mixture until hot. Add turkey cutlets, a few pieces at a time, and cook until lightly browned on both sides and tender, about 5 minutes. Remove cutlets to platter.
