Turkey Cutlets Piccata Recipe

Ingredients

 
1 16-ounce package fresh or frozen (thawed) turkey cutlets
 
1 egg
 
1 tablespoon milk
 
1 1/2 cups fresh bread crumbs
 
Butter or margarine
 
1 medium-sized lemon
 
3/4 cup water
 
1 envelope chicken-flavor bouillon
 
1/4 teaspoon salt

Directions

1. On cutting board, with meat mallet or dull edge of French knife, pound each turkey cutlet to about 1/8 inch thickness.
2. In pie plate, beat egg with milk until blended. On waxed paper, place bread crumbs. Dip cutlets in egg mixture, then in crumbs to coat both sides.
3. In 12-inch skillet over medium-high heat, in 4 tablespoons hot butter or margarine (1/2 stick), cook turkey cutlets, a few pieces at a time, until browned on both sides, adding a little more butter or margarine if necessary. Remove cutlets to plate.
4. Reduce heat to low. Squeeze juice of 1/2 lemon into drippings in skillet; stir in water, bouillon, and salt until blended, scraping to loosen brown bits from bottom of skillet. Return turkey cutlets to skillet; cover skillet and simmer 5 minutes or until turkey cutlets are fork-tender.
