4 turkey cutlets (4 ounces each)
 
1/4 cup all-purpose flour
 
2 tablespoons olive oil
 
3 cloves garlic, minced
 
2 tablespoons lime juice
 
1 teaspoon finely chopped jalapeno pepper, or to taste
 
1/2 cup Chicken Stock or low-sodium chicken broth
 
1/3 cup minced fresh cilantro (coriander) or 1/3 cup minced parsley mixed with 1 tablespoon dried cilantro
 
1/4 cup minced flat-leaf parsley

Directions

1 Dredge the turkey in the flour, shaking off any excess. In a 12-inch skillet, heat the oil over moderately high heat. Add the cutlets and saute for 1 1/2 minutes or until golden brown. Turn and cook 1 1/2 minutes on the other side or until golden and the juices run clear when the flesh is pricked with a fork. Transfer the cutlets to a plate.
2 Lower the heat, add the garlic to the skillet, and cook for 30 seconds. Add the lime juice and jalapeno pepper and cook 30 seconds more. Stir in the stock, cilantro, and parsley, then add the turkey and cook for about 2 minutes or until the turkey is heated through and the sauce is slightly thickened.
