Turkey Cutlets In Lime Cream Recipe

Ingredients
4 turkey cutlets (4 ounces each)
1 tablespoon plus 1 teaspoon lime juice
1/4 teaspoon each salt and black pepper
1 tablespoon unsalted butter or margarine
1/3 cup finely chopped shallots
1/3 cup dry white wine or water
1 cup Chicken Stock or low-sodium chicken broth
1 teaspoon grated lime rind
1/4 cup reduced-fat sour cream mixed with 1 teaspoon arrowroot or cornstarch
2 tablespoons snipped fresh chives or thinly sliced green onion tops
Directions
1 Sprinkle the turkey with 1 tablespoon of the lime juice and the salt and pepper; let stand for 10 minutes. In a 12-inch nonstick skillet, melt the butter over moderate heat until bubbling. Add the turkey and cook for 1 1/2 minutes on each side or until golden and the juices run clear when the flesh is pricked with a fork; transfer to a plate.
2 Add the shallots to the skillet and cook, stirring, for 1 minute. Add the wine and cook for 1 minute or until the liquid is reduced to 2 tablespoons. Add the stock and lime rind and simmer the mixture, uncovered, for about 5 minutes or until the liquid is reduced to 3/4 cup. If necessary, boil the mixture over moderate heat until it is reduced.

Add the turkey cutlets along with any juices on the plate and simmer for 2 minutes or until the turkey is heated through. Add the remaining teaspoon of lime juice and sprinkle with the chives.
