Turkey Croquettes Recipe
Ingredients
| Leftover turkey or chicken - 4 cups | ||
| Celery | 1/4 Cup (16 tbs), finely chopped | |
| Onions | 2 Tablespoon, chopped | |
| Salt | 1 Tablespoon | |
| Pepper | 1/4 Teaspoon | |
| Heavy whipping cream - 3/4 to 1 cup | ||
| Eggs | 2 | |
| Water | 3 Tablespoon | |
| Bread crumbs | ||
| Vegetable oil | 1 Quart | |
Directions
GETTING READY
1 Grease a baking pan.
MAKING
2 In a bowl, mix the chopped turkey, celery, onions, and seasonings.
3 Add in cream, just enough to moisten and bind the mixture together.
4 Press into the greased pan.
5 Place in the refrigerator and chill thoroughly.
6 In a bowl, beat eggs and water together.
7 Prepare croquettes or balls with the turkey mixture.
8 Roll in bread crumbs and dip into egg mixture and then roll in crumbs once again.
9 In a skillet, heat vegetable oil at 375 degrees Fahrenheit and deep fry the croquettes for 3 or 4 minutes or until golden brown.
SERVING
10 Serve hot with a cream sauce.
