Ingredients

 2 apples, preferably Golden Delicious

 Ground turkey2 Pound, minced (For the turkey burgers:)

 Shallots1/4 Cup (16 tbs), chopped (For the turkey burgers:)
 Garlic1 Clove (5gm), minced (For the turkey burgers:)
 Salt1 1/2 Teaspoon (For the turkey burgers:)
 Ground pepper1/2 Teaspoon (For the turkey burgers:)

Directions

To prepare the relish, peel, halve and core the apples.
Chop them finely or, using the large holes of a hand-held grater shredder, shred them.
Transfer to a large bowl and add the vinegar, mint, sugar, oil, celery seeds, mustard seeds and salt.
Stir and toss with a fork to combine, then cover and refrigerate for at least 2 hours before serving to blend the flavors and keep the relish crisp.
Prepare a fire for direct-heat cooking in a grill .
Position the grill rack 4-6 inches (10-15 cm) above the fire.
To prepare the turkey burgers, in a large bowl, combine the turkey, cheese, shallots, garlic, salt and pepper.
Using a fork, mix gently to combine.
Shape into 6 patties each about 3 inches (7.5 cm) in diameter and 1 inch (2.5 cm) thick.
Place the patties on the rack.
Grill, turning two or three times, until the burgers are well browned on both sides and no longer pink in the center, 16-20 minutes.
To serve, transfer to a warmed platter.
Pass the relish at the table.
