 Carcass from 10- to 16-pound turkey, broken up
 Water2 Quart
 Onion1 Large, quartered
 Celery stalks2 , quartered
 Carrot1 , quartered
 Salt1 Tablespoon
 8 black peppercorns, crushed in a mortar and pestle
 Bay leaf1 , crumbled
 Dried thyme1 Teaspoon

Directions

Put all the ingredients in a large heavy pot, bring to a boil, cover, and simmer for 2 hours.
Strain the broth and use in soups, stews or gravies.
Remove any turkey meat from the bones and add to the broth or use in casseroles.
