| 3 1/2 to 4-lb. frozen bone-in turkey breast, thawed | ||
| Madeira Glaze | ||
| Red currant jelly | 1/2 Cup (16 tbs) | |
| 2 tablespoons Madeira or apple juice | ||
Directions
1 Place turkey breast, skin-side-up on microwave roasting rack, in 2-quart (12 x 7) glass baking dish. Brush with 1/2 of Madeira Glaze.
2 Microwave for 40 minutes on HIGH. Brush with remaining glaze and continue cooking for 35 to 40 minutes on 7 (MED. HIGH), or until meat cut near bone is no longer pink (about 180°F). Some areas may cook more rapidly than others; cover these with small pieces of foil to slow cooking. Let stand, covered with foil, 10 minutes before serving. Madeira Glaze: Combine all glaze ingredients in small mixing bowl; beat with rotary beater until smooth. 8 to 12 Servings
