 2 (1 pound each) turkey breasts, all skin, bones, and visible fat removed

 8 cups defatted chicken stock
 1 large potato, peeled and cut into 8 wedges
 1 large turnip, peeled and cut into 8 wedges
 3 large carrots, peeled and cut into 1-inch diagonal slices
 1 large onion, peeled and cut into 8 wedges
 2 cups bok choy, cut into 1-inch diagonal slices

Directions

Day 1: Combine the ingredients for seasoning mix 1 in a small bowl and sprinkle it evenly over the turkey breasts.
Refrigerate overnight in a covered bowl.
Day 2: Combine the ingredients for seasoning mix II in a heavy 5-quart pot.
Stir in the stock, turn the heat to high, and bring the mixture to a boil.
Put in the turkey breasts and cook for 10 minutes.
Add the potato, turnip, and carrots, and cook for 5 minutes.
Add the onion and bok choy, and cook until the turkey is done, about 15 minutes more.
Cut the turkey into serving pieces, and serve the portions with some of each vegetable and carrots, and cook for 5 minutes.
