Turkey, Bean, And Rice Salad Recipe
Ingredients

| Mild salsa | 1 Cup (16 tbs) | |
| Canned black beans | 4 Ounce, drained, rinsed | |
| Added sugar | 1 Tablespoon | |
| Cooked | 1 Cup (16 tbs) | |
| Lettuce leaves | 2 Cup (16 tbs) | |
| 3/4 ounce reduced-fat Cheddar cheese, shredded | ||
Directions
1. In 1-quart microwavable casserole combine turkey and oil; microwave on High (100%) for 4 minutes, stirring once every 1 1/2 minutes, until turkey is no longer pink. Stir in salsa, beans, and lime juice; microwave on Medium (50%) for 1 minute until thoroughly heated. Add rice and stir to combine.
2. To serve, on serving platter arrange lettuce; top with turkey mixture and sprinkle with cheese.
