1 teaspoon ground black pepper
 
1 teaspoon paprika
 
1 teaspoon garlic powder
 
1 pound turkey breast cutlets, cut into 1/2"-wide strips
 
2 teaspoons olive oil
 
1 1/2 cups sliced yellow summer squash
 
1 cup cubed green or sweet red peppers
 
4 ounces snow peas, ends and strings removed
 
1/2 teaspoon dried Italian seasoning

Directions

Combine the black pepper, paprika and garlic powder in a pie plate.
Roll the turkey strips in the mixture until coated.
In a wok or large skillet, heat 1 teaspoon of the oil over medium-high heat.
Add the turkey and stir-fry for 3 to 4 minutes or until the turkey is no longer pink.
Transfer the turkey to a plate and cover to keep warm.
Heat the remaining 1 teaspoon of oil in the wok or skillet.
Add the squash, green or red peppers and snow peas.
Stir-fry for 3 to 4 minutes or until the vegetables are crisp-tender.
Sprinkle with the Italian seasoning.
Reduce the heat to medium.
Stir in the turkey and cook for 1 to 2 minutes or until heated through.
