Turkey And Fruit Curry Recipe
Ingredients
| Butter/Margarine | 3 Tablespoon | |
| Onion | 1 Cup (16 tbs), chopped | |
| Large tart apple- 1 , pared, sliced | ||
| All-purpose flour- 1/4 cup | ||
| Ground ginger | 1/2 Teaspoon (Curry powder- 2 to 3 teaspoons) | |
| Salt | 1 Teaspoon (Curry powder- 2 to 3 teaspoons) | |
| Pepper | 1/4 Teaspoon (Curry powder- 2 to 3 teaspoons) | |
| Turkey Broth or chicken broth- 2 1/2 cups | ||
| Lime peel- 2 teaspoons grated | ||
| Lime juice | 2 Tablespoon (Curry powder- 2 to 3 teaspoons) | |
| Turkey- 3 cups cooked, cut into 1-inch pieces | ||
| Bananas | 2 , peeled (Curry powder- 2 to 3 teaspoons) | |
| Pineapple chunks | 1 Can (10oz) (Curry powder- 2 to 3 teaspoons) | |
| Hot white rice | ||
Directions
MAKING
1. In a large skillet, tip in the 3 tablespoons of butter. Add the onions, curry powder and apple and sauté till they are tender. This will take five minutes
2. Remove from heat and add the flour, ginger, salt and pepper. Mix well till completely combined.
3. Stir in the Turkey broth, lime peel and juice and mix well
4. Bring to boiling and reduce heat to simmer. Cover and simmer again for 20 while stirring occasionally
5. Add the turkey, bananas and pineapple and heat again to boiling
SERVING
6. Serve hot over white rice with chutney on the side.
