For the turkey hash
 Potatoes1 Large, diced
 Butter2 Tablespoon
 Garlic1 Tablespoon, minced
 Onions1 Large, chopped finely
 Green bell pepper1 Large, chopped

 Yellow bell pepper1 Large, chopped
 Turkey breast meat3 , chop into 1 inch thick matchsticks (3 slices)

For the beef hash
 Boiled potatoes1 Large, sliced
 Butter2 Tablespoon
 Garlic1 Tablespoon, minced
 Onions1 Large, sliced
 Green bell pepper1 Large, julienned
 Red bell pepper1 Large, julienned
 Yellow bell pepper1 Large, julienned
 Corned beef slices5 , chop into 1 inch thick matchsticks

Directions

MAKING
1. For the Turkey Hash: In a large saute pan, melt butter, add in the garlic and toast it for 2 minutes.
2. Add in onions, green bell pepper, red bell pepper, yellow bell pepper, boiled potatoes. Mix well and cook for 2 minutes.
3. In a small pot with boiling water, poach the egg with vinegar on high flame.
4. Add the turkey breast slices, pepper powder and coriander leaves. Mix well and cook for another 7 - 8 minutes until the turkey is cooked.
5. For the Beef Hash: In a large saute pan, melt butter, add in the garlic and toast it for 2 minutes.
6. Add in onions, green bell pepper, red bell pepper, yellow bell pepper, boiled potatoes. Mix well and cook for 2 minutes.
7. In a small pan, melt butter, break open the egg sunny side up and cook on low to medium heat for 5 minutes.
8. Add the beef slices, pepper powder and coriander leaves. Mix well and cook for another 7 - 8 minutes until the beef is cooked.

SERVING
9. Plate the turkey hash, spoon the poached egg on top and ladle it with a spoon of cream sauce and garnish it with a few sprigs of coriander. Serve hot.
