1 61/2 ounce can imported tuna in olive oil, undrained
 
1 tablespoon Dijon mustard
 
5 tablespoons red wine vinegar
 
1 large clove garlic, peeled and minced or crushed
 
2 tablespoons finely chopped flat-leaf parsley
 
2-4 tablespoons lemon juice
 
1 cup extra-virgin olive oil or 1/2 olive oil and 1/2 vegetable oil
 
Salt and freshly ground black pepper, to taste

Directions

In a small bowl, mash the tuna with a fork, and stir in the mustard, vinegar, garlic, parsley, and 2 tablespoons of lemon juice.
Slowly pour in the oil in a steady stream, whisking constantly.
Add salt and plenty of pepper and taste to see if it needs additional lemon juice and seasonings.
Set aside while preparing pasta salad nicoise.
