Surimi , Guacamole , Salted cookie , ricotta , tuna belly , onions , garlic , pepper

Directions

MAKING
1 In a pan, heat some oil.
2 Add in onion and garlic and fry stirring.
3 Add in the tuna belly and cook, stirring until golden.
4 In a bowl, combine guacamole and ricotta.
5 Season to taste and mix well.
6 In another bowl, crumble some salted cookies.
7 Add some olive oil to the cookies.

SERVING
8 On a serving plate, make a layer of cookie mix, top it up with the guacamole and ricotta, finally top with a layer of tuna as shown in the video.
9 Garnish with surimi and serve.

Very interesting recipe! Is the salted cookie like a saltine cracker? I love making timbales as a starter course. I might use fresh tuna/ahi and Dungeness crab-do you think that would work? Canned tuna belly is not common here-infact I have never seen it. Shanti/Mary-Anne
