Tuna Cashew Delight Recipe
Ingredients
| 284 mL 10 oz soup, cream of mushroom or cream of chicken | ||
| 175 mL 3/4 cup evaporated milk | ||
| 750 mL 3 cups short pasta, cooked al dente | ||
| 213 mL 7 1/2 oz tuna, canned in water, drained, crumbled | ||
| 125 mL 1/2 cup celery, diced | ||
| 50 mL 1/4 cup green and/or red pepper, diced | ||
| 125 mL 1/2 cup cashews, chopped | ||
| Onion | 1 Medium, finely chopped | |
| 25 mL 2 tbsp fresh parsley, chopped pepper, to taste | ||
| 50 mL 1/4 cup soda crackers, unsalted, crumbled | ||
Directions
Combine the soup and milk in a microwaveable glass 2 L (8 cups) dish.
Add the other ingredients, except the soda crackers, and mix well.
Cook in the microwave on Maximum (100%) for 8 to 10 minutes.
Stir.
Sprinkle the crumbled soda crackers on the mixture.
Cook on Maximum (100%) for 2 to 4 minutes or until the mixture is hot in the center.
