Tuna Tugs Recipe
Ingredients
| Tuna | 7 Can (10oz), drained | |
| Lemon juice | 1 Tablespoon | |
| 2 hard-cooked eggs, coarsely chopped | ||
| 1/4 cup sliced sweet pickle | ||
| 2 tablespoons sliced green onion | ||
| Salt | 1/4 Teaspoon | |
| Pepper | 1 Dash | |
| 3 English muffins, split, toasted, and spread with butter | ||
| Boston or Bibb lettuce | ||
| Tomatoes | 3 Medium, thinly sliced | |
| 1/2 cup mayonnaise or salad dressing | ||
Directions
Break tuna in chunks and sprinkle with lemon juice; combine with hard-cooked eggs, pickle, onion, salt, and pepper.
Mix gently and chill.
Top each English muffin half with Boston lettuce, 3 tomato slices, and tuna salad.
Garnish with a dollop of mayonnaise.
