Tuna Spinach Salad With Peanut Dressing Recipe

Ingredients
2 navel oranges
2 tablespoons smooth peanut butter
2 tablespoons reduced-sodium soy sauce
2 teaspoons ground ginger
2 tablespoons cider vinegar
1 tablespoon Oriental sesame oil
1/4 teaspoon pepper
8 cups (loosely packed) fresh spinach leaves
1/4 pound mushrooms
2 medium carrots
1 small red onion
1 1/2 cups bean sprouts (about
1/4 pound)
2 cans (6 1/2 ounces each) water-packed tuna, drained
1/4 cup (packed) cilantro sprigs (optional)
Directions
1 Grate the zest from the oranges. Juice the oranges and measure out 2/3 cup.
2 In a small bowl, blend the peanut butter, soy sauce and ground ginger. Stir in the orange juice and zest, the vinegar, sesame oil and pepper.
3 Tear the spinach into bite-size pieces. Slice the mushrooms. Cut the carrots into thin slices or matchsticks. Thinly slice the onion.
4 Mound the prepared vegetables on 4 individual salad plates or a single serving platter. Top with the bean sprouts and flaked tuna.
5 Coarsely chop the cilantro (if using) and stir it into the dressing. Spoon the dressing over the salad.
