4 tablespoons butter or margarine
 
4 tablespoons flour
 
1/8 teaspoon pepper
 
1/2 teaspoon onion salt
 
1/4 teaspoon salt
 
2/3 cup milk
 
4 egg yolks, well beaten
 
1 can (6/4 to 7 oz.) tuna, drained and finely chopped
 
1/4 cup shredded swiss cheese
 
8 egg whites
 
1/4 teaspoon cream of tartar
 
2 tablespoons paprika

Directions

1. In a small-size heat resistant non-metallic bowl melt butter on delicate food cycle, 1 1/2 minutes.
2. Stir in flour, salt, pepper and onion salt. Heat on delicate food cycle for 2 minutes or until mixture bubbles.
3 Blend in milk slowly. Heat uncovered, on delicate food cycle for 3 minutes, stirring after the first 1 minute or until mixture thickens and bubbles (sauce will be quite thick).
4. Beat mixture slowly into egg yolks. Stir in tuna and swiss cheese. Allow mixture to cool.
5. Prepare a 1 1/2 quart souffle dish by forming a collar of wax paper around top of dish that extends about 3-inchs above dish.
6. Beat egg whites with cream of tartar, until stiff but not dry.
7. Gently fold tuna mixture into egg whites. Pour into souffle dish.
8. Sprinkle top with paprika.
9. Cook on delicate food cycle for 16 to 18 minutes, turning souffle after 10 minutes of cooking. Souffle should be fairly firm to the touch.
