Tuna Potato Salad Recipe
The tuna potato salad is a cold fish salad made with canned tuna and vegetables. With added olives and eggs to it, the tuna potato salad is flavored with simple italian dressing and is great for brunch or lunch parties.
Ingredients
| Potatoes | 2 Medium, pared | |
| Italian salad dressing | 2 Tablespoon | |
| Snipped parsley | 1 Tablespoon | |
| Lettuce | 3 Cup (16 tbs) | |
| Tuna | 1 9 1/4 Ounce, drained, flaked | |
| 3 hard-cooked eggs, quartered | ||
| 3/4 cup Swiss cheese cut in strips | ||
| Ripe olives | 1/2 Cup (16 tbs), pitted | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| Italian salad dressing | 1/2 Cup (16 tbs) | |
Directions
Cook potatoes in small amount of water for 20 to 25 minutes, till tender.
Slice into salad bowl.
Sprinkle with 2 tablespoons dressing and parsley.
Chill.
Layer remaining ingredients on top except 1/2 cup Italian dressing.
Before serving, pour dressing over salad and toss lightly.
