Tuna Patties Recipe
These tuna patties make for excellent fish burgers or sandwiches. Prepared with canned tuna, the tuna patties are combined with vegetables. Flavored with yogurt and ketchup to taste, the tuna patties are skillet cooked to a lovely golden color.
Ingredients
1 can water packed light tuna, drained and flaked
1/2 cup soft fresh whole wheat bread crumbs
1 small yellow onion, chopped
1/3 cup finely chopped celery
1/4 cup plain low fat yogurt
2 tablespoons low sodium ketchup
1 tablespoon lemon juice
1/4 teaspoon black pepper
Nonstick cooking spray
1 teaspoon unsalted margarine
Directions
In a medium size bowl, mix the tuna, bread crumbs, onion, celery, yogurt, ketchup, lemon juice, and pepper.
Shape into 4 thin patties about 3 inches in diameter.
Coat a heavy 10 inch nonstick skillet with the cooking spray, add the margarine, and melt over moderate heat.
Add the patties and brown for 3 to 5 minutes on each side or until golden, turning once.
