Tuna & Mozzarella melt Recipe

6 tablespoons butter or margarine
 
1 medium-size onion, chopped
 
1/4 cup flour
 
1/2 teaspoon salt
 
Dash nutmeg
 
2 cups milk
 
1 package (6 ounces) process Gruyere cheese, shredded
 
2 cans (7 ounces each) tuna, drained and flaked
 
2 packages (10 ounces each) frozen chopped spinach, thawed and drained
 
1/2 cup fine dry bread crumbs
 
1/4 cup grated Parmesan cheese

Directions

1. Melt butter or margarine in a medium-size saucepan; saute onion just until soft; stir in flour, salt and nutmeg; cook, stirring constantly, just until bubbly. Stir in milk; continue cooking and stirring until sauce thickens and bubbles 1 minute; remove from heat. Stir in shredded cheese, just until melted; add tuna.
2. Place spinach in the bottom of a lightly greased 6-cup baking dish; spoon tuna-cheese mixture over the top; top with crumbs and Parmesan cheese.
3. Bake in moderate oven (350°) 25 minutes, or until golden.
