Tuna Loaf Recipe

Tuna loaf is a light and easy lunch or dinner loaf that is easily prepared in a little over half hour. Made with white canned tuna combined with eggs and breadcrumbs, the tuna loaf is flavored with a dash of lemon juice, bell peppers, onions and a dash of worcestershire sauce. baked till done, it can be served with a peppy sauce.

Ingredients

 White tuna1 Can (10oz), drained
 2 eggs, lightly beaten
 1 cup Evaporated or Light Evaporated Skimmed Milk
 Whole wheat bread crumbs1/2 Cup (16 tbs)
 Green bell pepper2 Tablespoon, finley chopped
 Onion1 Tablespoon, finley chopped
 Lemon juice2 Tablespoon
 Salt1/2 Teaspoon
 Pepper white1/8 Teaspoon
 Worcestershire sauce1/4 Teaspoon

Directions

Combine all ingredients in medium bowl.
Transfer to 8 1/2 X4 1/2 inch glass loaf pan.
Bake at 350 °F 30 to 40 minutes or until firm.
May be served hot or cold or used as spread for sandwiches or crackers.
Garnish as desired.
