Tuna Loaf Recipe
Tuna loaf is a light and easy lunch or dinner loaf that is easily prepared in a little over half hour. Made with white canned tuna combined with eggs and breadcrumbs, the tuna loaf is flavored with a dash of lemon juice, bell peppers, onions and a dash of worcestershire sauce. baked till done, it can be served with a peppy sauce.
Ingredients
1 can (6 1/2 ounces) Solid White Tuna in Springwater, drained
2 eggs, lightly beaten
1 cup Evaporated or Light Evaporated Skimmed Milk
1/2 cup whole wheat bread crumbs
2 tablespoons finely chopped green bell pepper
1 tablespoon finely chopped onion
2 tablespoons lemon juice
1/2 teaspoon salt
1/8 teaspoon white pepper
1/4 teaspoon Worcestershire sauce
Directions
Combine all ingredients in medium bowl.
Transfer to 8 1/2 X4 1/2 inch glass loaf pan.
Bake at 350 °F 30 to 40 minutes or until firm.
May be served hot or cold or used as spread for sandwiches or crackers.
Garnish as desired.
