Tuna Florentine Recipe
|Spinach||1 Pound, cooked, chopped and seasoned|
|All purpose flour||3 Tablespoon|
|Milk||2 Cup (32 tbs)|
|Grated swiss cheese||1⁄4 Cup (4 tbs)|
|Grated parmesan cheese||1⁄3 Cup (5.33 tbs)|
|Grated cheddar||1⁄2 Cup (8 tbs)|
|Canned tuna||14 Ounce (2 Cans, 7 Ounces Each)|

Make a roux with the butter and flour; add milk, Swiss cheese, 2 tablespoons of the Parmesan, and the oil and juice from the tuna.
Cook over hot water for 20 minutes.
Add tuna, flaked, and pour over spinach.
Sprinkle top with remaining Parmesan and broil until brown and bubbly.
