Ingredients

 
Medium sized firm, fresh cucumber - 1
 
Garlic - 1 large clove, peeled and finely grated
 
Fresh dill leaves - 3 tbsp, chopped
 
Natural yogurt - 2 1/4 cups
 
Fleshy black olives - few
 
Extra virgin olive oil
 
Salt
 
Serve with: Fritters of your choice.

Directions

GETTING READY
1 Wash and dry the cucumber.
2 Slice off the ends, and peel.

MAKING
3 In a large bowl, grate the cucumber using a handheld grater or in a food processor.
4 Mix in the garlic, 1/2 tsp salt, dill, and the yogurt.
5 Drizzle a little oil over the surface.

SERVING
6 Garnish with a few black olives, and serve lightly chilled as a refreshing accompaniment to a Greek or Turkish meal.
7 Excellent served as a dip with fritters.
