| 1 small can truffles, with the liquid in which they are packed | ||
| 1/4 cup Madeira or dry red wine | ||
| 1 tablespoon finely chopped shallots or onion | ||
| Butter | 2 Tablespoon | |
| 1 1/2 cups brown sauce or canned beef gravy | ||
| Maggi seasoning | ||
Directions
1. Chop the truffles coarsely and reserve the liquid in the can. Combine the chopped truffles with the Madeira and cook over moderately high heat until the wine is reduced to about one tablespoon.
2. Cook the shallots in one tablespoon of the butter and add to the brown sauce. Cook three minutes and strain, if desired. Add the truffles and reduced wine. Add the truffle liquid in the can, the remaining butter and a few drops of Maggi seasoning. Spoon the sauce over cooked beef.
