Ingredients

 
4 trout, cleaned
 
75 g/3 oz/1/3 cup unsalted butter
 
20 ml/4 tsp horseradish sauce
 
30 ml/2 tbsp flaked almonds
 
20 ml/4 tsp chopped parsley
 
Salt and freshly ground black pepper
 
TO GARNISH:
 
Lemon wedges
 
TO SERVE:
 
New potatoes
 
Cold cooked French beans, tossed in French dressing and sprinkled with very finely chopped onion

Directions

Slash the fish on both sides several times with a sharp knife.
This helps the flavoured butter to penetrate the flesh.
Mash the butter and horseradish together and spread a little over four sheets of foil, shiny sides up, and sprinkle with half the almonds.
Lay a fish on top of each sheet and spread with the remaining butter mixture.
Sprinkle with the remaining nuts, the parsley and a little salt and pepper.
Wrap loosely but securely and grill (broil) or barbecue for 12-15 minutes, turning once, until the fish is cooked through.
Transfer to serving plates and serve hot, garnished with lemon wedges.
