Trout With Almonds Recipe
Ingredients
2 frozen trout, thawed
Salt
Freshly ground black pepper
A little milk
A little flour
2 oz. butter
2 teaspoons olive oil
4 tablespoons flaked almonds
The juice of half a small lemon
2 tablespoons finely chopped parsley
Directions
Season the trout with salt and black pepper.
Dip them in milk, then in flour, shaking off the excess afterwards.
In a frying pan melt half the butter with the olive oil.
Fry the fish until they are golden brown on both sides and the flesh flakes off easily with a fork—about 4-5 minutes on each side.
Remove the fish from the pan and place on a heated serving dish.
Drain the fat from the pan and add the remaining butter.
When it has melted, add the flaked almonds and fry, shaking the pan, until the almonds are golden brown.
Sprinkle with lemon juice and stir in the chopped parsley.
Pour the butter juices and almonds over the trout and serve immediately.
