4 small trout
 
6 oz (175 g) each, cut into 1/2 inch (1 cm) steaks
 
8 small potatoes, sliced
 
1 onion, cubed
 
24 bacon pieces
 
Marinade
 
4 shallots, finely sliced
 
1/4 Cup (60 ml) orange juice
 
1/4 Cup (60 ml) white wine
 
1/2 Cup (125 ml) plain yogurt
 
2 tbsp (30 ml) vegetable oil
 
2 tbsp (30 ml) chopped parsley
 
1/2 tsp (2 ml) thyme
 
Salt and pepper
 
2 tbsp (30 ml) butter

Directions

–  Slide trout onto skewers, alternating with vegetables (place a piece of bacon on either side of the trout), then place skewered fish in a long, shallow dish. In a bowl, combine marinade ingredients, pour over shish kebabs and marinate 24 hours, turning from time to time.
–  In a large skillet, melt butter and cook shish kebabs for 6 minutes on each side.
