Trout In Butter Sauce Recipe

Ingredients
4 medium sized trout, cleaned
Salt to taste
Flour
1/2 cup butter
1/2 teaspoon mace
Dash of freshly ground black pepper
4 fresh sage leaves,
or 1/4 teaspoon dried sage
Grated peel and juice of 1 lemon
Parsley
Lemon slices
Directions
Sprinkle fish inside and out with salt.
Roll in flour; shake off excess.
Heat 1/4 cup of the butter in a frying pan (use one that is large enough so that trout lie flat) and brown fish on both sides, taking care not to burn.
Transfer cooked fish to a warm platter and keep hot.
Place in the frying pan the other 1/4 cup butter, mace, pepper, sage leaves (cut in fine strips), lemon peel, and lemon juice.
Heat until butter melts and bubbles; pour over trout.
Garnish with parsley and lemon slices.
