Ingredients
1 cantaloupe, seeded, cut into 1/2 chunks
1 or 2 jalapenos, minced
1 1/2 cups (1/2 inch pieces) red, green and yellow bell peppers
1/2 cup chopped red onions
1 1/2 cups chopped jicama or daikon radish
3 scallions, chopped
3 tablespoons fresh lime juice
3 tablespoons olive oil
3 tablespoons rice vinegar
Honey to taste
Salt to taste
Romaine lettuce
Cilantro (optional)
Directions
Combine the cantaloupe, jalapenos, bell peppers, onions, jicama and scallions in a large bowl and toss gently.
Place the lime juice, olive oil, rice vinegar, honey and salt in a jar with a lid and shake well to blend.
Pour over the fruit mixture and toss gently.
Chill, covered, until minutes before serving.
Mound the fruit salad on a lettuce-lined serving platter.
