Tropical Fruit Salad With Fresh Mint Dressing Recipe

1 medium pineapple
1 kiwi, peeled and thinly sliced
1 large banana, peeled and cut into 1/2-inch chunks

Directions
Cut pineapple in half lengthwise.
Scoop out pulp, leaving shells 1/4 to 1/2 inch thick; set aside.
Cut pineapple into bite-size pieces, discarding core.
Combine pineapple chunks, kiwi, banana, peaches, and strawberries; toss gently, and spoon into pineapple shells.
Sprinkle with toasted almonds.
Serve with Fresh Mint Dressing.
