Tropical Bacon Rolls Recipe
The tropical bacon roll is prepared with bacon rashers filled with a mix of dried fruits with spices and honey. The dried apricots and sultanas are chopped and mixed with honey , cinnamon nutmeg and almonds. The bacon spread with a generous layer of the filling and cooked by securing with a toothpick. Ingredients
| Dried apricots | 200 Gram | |
| Sultanas | 1/4 Cup (16 tbs) | |
| Honey | 1 Teaspoon | |
| Cinnamon | 1/4 Teaspoon | |
| Nutmeg | 1/4 Teaspoon | |
| Ground almonds | 1 Tablespoon | |
| 6 rashers bacon, rind removed and halved | ||
Directions
In a food processor, finely chop apricots and sultanas.
Add honey, cinnamon, nutmeg and almonds.
Spread a thin layer of mixture over bacon rashers.
Roll up bacon, cut in half and secure with a toothpick.
Place between paper towels, cook for 6-8 minutes on HIGH.
Allow to cool slightly before serving.
