Tropical Rumaki Recipe
Ingredients
| Bacon Slices | 10 , cut in half | |
| 1/4 pineapple, pared and cut into 1-inch pieces | ||
| 1 papaya, pared, seeded and cut into 1-inch pieces | ||
| Packed brown sugar | 1/4 Cup (16 tbs) | |
| Curry powder | 1 Teaspoon | |
Directions
1. Arrange half of the bacon pieces on rack in dish. Cover with paper towel; arrange remaining bacon pieces on top. Cover with paper towel and microwave on high 8 to 12 minutes or until bacon is almost crisp. Remove bacon from rack; drain on paper towel. Drain fat from dish.
2. Wrap bacon piece around each piece fruit; secure with wooden pick. Mix brown sugar and curry powder. Roll wrapped fruit in sugar mixture; place on rack in dish.
